    Hello, I apologize if this is an issue that has already been resolved, but was curious to know if there is a way to have WordPress recognize a newly posted Gallery as a recent post. Basically I would like to use the Widget recent posts to display the latest galleries.

    no, but you can install a recent custom post widget or use the widget that comes with image store. Settings > general > widget
