Customer Checkout details do not appear in sales and customers are not created a

Great plugin does all the things i need and u have put my photos onlinr for selling put all the sales made via checkout(via email only)  are not stored in the back-end sales tab of the plugin

more details:

all the data completed at the checkout are stored in the sales tab in the back-end except the most important for me that are address and phone number

these two are required on the from yet are not stored anywhere
only sales made via PayPal are fully documented with addresses

i dont know if this has anything to to with the above problem but although i have few paypal sales and few only via email(checkout) i have no customers created in the backend

On another matter i am wondersing if any %tag% exist for the custom receipt text area because i want to be able to have somthing like:
“if the adress listed here (adress:_______________) is wrong or blank please send an email with your order Number and complete delivery address”

My store is online and i am receiving order so any help asap is welcomed
